Good afternoon!
My diet has vastly changed recently under the advisement of my Doctor of Functional Medicine. I am now required to eat 12 servings of vegetables a day! That is A LOT to eat….and it requires a lot of preparation. How do I do it? I buy as many colors of vegetables as I can at the store…come home…and immediately chop them all up into small, small pieces. I store it in my fridge for the week…and build many salads out of it. Additionally, when I cook, I am finding that I am adding a lot more vegetables to what I cook….because they are already chopped…I just toss in some extra nutrition for my family. The biggest benefit is that my children are eating more veggies without even knowing it. I chop everything so small (think chopped salad) that they don’t even notice it thrown into their regular dishes.
If I did not do this every week, I think the goal of eat 12 servings of vegetables a day would be unattainable. Sometimes it really is all about presentation (for the kids)….and preparation (for me).
