This weekend, I was lucky enough to score free tickets to the Farm to Table Conference at the Lawrence Convention Center. While I was there, I checked out a booth for "The Happy Vegan." She sells vegan "cheese" made out of almonds and nutritional yeast. Her product is sold at Whole Foods. I have to tell you, being dairy-free, this is the closest thing to cheese that I have had in a long time. And....it made me, for the first time in a while, perfectly happy to go cheese-less. I bought every flavor that she sells.
Tonight, I took 4 chicken breasts, and cut a slit into the side of each one. I salted and peppered the inside of the chicken breast, added the vegan cheese, spinach, and cooked bacon....closed up the inside...and fried the "chicken sandwich" in the bacon grease. I served it over a bed of Arugula and Spinach. It was delicious...and, because I buy healthy meats from the local butcher, it was totally healthy.
Sometimes, when we decide to eat right or go on a "diet," we think that it will entail depriving ourselves of the food that we love. Instead, I hope that taking this challenge for your health can be about learning about new food, trying new recipes, and enjoying the journey. I truly enjoy food now more than I ever have. Finding this "Vegan Cheese" helped! Going to a conference with like-minded people, who are all interested in health, wellness, and being close to their food also helped. Let this challenge be an adventure for you!
